As there are practices that cannot be missed and in order for the process to be successful, a cross is made in the dough and the prayers left from the \u201c ancient ones \u201d are repeated. After this ritual, a towel is placed over the dough and the sieve is placed on top of it.<\/p>\n<p>In the meantime, the fire is added to the oven, which heats up slowly until the embers are removed and the interior is swept using the emblematic broom.
